Pentadin
Pentadine, known as Pentadin, is a sweet protein extracted from the fruit of Pentadiplandra brazzeana Baillon, a tropical African plant, with a molecular weight of 12.0 KDa. The molecular weight of Pentadin is 12.0 KDa, and its sweetness index is about 500. Pentadin is extracted from the same plant as Brazilian sweet protein, but the difference is that Pentadin is extracted from the fruit after heat drying, while Brazilian sweet protein is extracted from fresh fruit. In addition, the sweetness of pectin disappears more rapidly.
